I don’t know about you, but sometimes finding ideas for healthy but delicious packed lunches can be a bit of a struggle. Finding something that doesn’t take ages to make, is portable and doesn’t need cooking (or can be cooked in the office microwave) can be a real challenge but this butternut squash frittata recipe perfectly fits the bill.
Its quick and simple to make, and can be eaten cold or warmed up in the microwave, if one is available. Pair with a nice salad and you have the perfect packed lunch! So without further ado, here is the butternut squash frittata recipe:
Butternut Squash Frittata
- 1 packet Ready sliced butternut squash
- 1/2 Red onion, finely chopped
- 100 grams Feta cheese
- 6 Large eggs, whisked
- Fresh thyme to taste, removed from the stalks
Soften the onions in a large frying pan until they are golden brown (approximately 5 mins on a medium heat).
Meanwhile, microwave the butternut squash for 1-2 minutes, until soft. Alternatively, you can steam it if you have the time, I use a steamer insert in a pan, but an electric steamer would do the job too.
Add the butternut squash, feta cheese, and thyme to the pan and pour the whisked eggs over the top. Season with salt and pepper and cook over a medium heat until the eggs are mostly set. While this is cooking, preheat your grill.
Once the frittata is almost set, transfer the pan to the grill to brown the top, approximately 3-5mins.
Cut into slices and serve.
You can play around with this recipe and try using different vegetables in place of the butternut squash and different cheeses in place of the feta. Mushroom and gruyere with slice potatoes works very well!
